Gardening

I've been keeping up on the garden blog so to see more of what's been happening over at the Vantucky Victory Garden be sure to check there. I thought I would post a couple here though to give you an idea of what we've been up to.

This is the cute little greenhouse that we've been using to start our plants.
All full of our tomatoes, basil, peppers, melons, etc.

We planted 150+ tomato plants last Friday this is half of them.

Took this shot from the barn looking back towards the garden.

Recipe for Fresh Tomato Sauce

5 Large Tomatoes, peeled, seeded and finely diced. Drain in a colander over a bowl for 20 minutes

Remove to a large bowl and stir in:

1/2 C. Fresh Basil leaves, finely chopped.

3 TBS. Extra Virgin Olive Oil

2 Cloves Garlic, Finely minced or to taste. (I use 4) love the garlic

2 TBS. Balsamic Vinegar or to taste

Salt and Pepper to taste.

Let stand at room temperature for 30 minutes.

I add this to 8 ounces of cooked ziti or penne. It is so wonderfully delicious. Great for a warm day dinner with a salad and bread.
